Easy Peasy Greek Dip Appetizer
You've been begging and Dianne's back to share the next recipe in our Easy Peasy series. What's the Easy Peasy series? Basically amazingly delicious recipes that you can prepare in 10 minutes or less. Easy. Peasy. Let me just say that if you are the person who spends hours preparing an appetizer—please don’t judge my recipes—I am not a foodie—I’m an eater! I love food—and I especially love food that can make it from the kitchen to the table in a minimal amount of time—possibly during a commercial break in a game or my favorite food network show (somewhere in #Appetizers #spicyappetizers #parties
Use a large plate or rectangular serving platter—again, I happen to have shallow white rectangular serving dishes that make this look gorgeous—and I have a Mexican serving dish that makes this look gorgeous—and I have those gorgeous bright colored Fiestaware-like plates from the Dollar Tree that I wisely snagged a while back–you just can’t go wrong—pour the olive oil in the platter/plate.
This is also a recipe that you can fix, cover with plastic wrap, and ignore until the company arrives. When it’s time to serve, just set out the crackers/bread by the dip—and let everyone dip their way to a small bit of heaven to their taste buds! Just try it—you’ll see—it’s one of my latest obsessions!

Total time: 10 minutes

• 2 roma tomatoes (chopped—and you can buy these already chopped in most stores but they take so little time to chop that I rarely do that)
• 2-3 scallions (chopped—the white and green parts—and, yes, I do often buy them already chopped and just freeze whatever I don’t use so I don’t waste my well-spent money)
• ½ cup – 1 cup crumbled feta cheese (this is a taste issue—I have a cheese addict in my house—more cheese on anything means he will consume it)
• 1-2 tablespoons Cavender’s All Purpose Greek seasoning (to suit YOUR taste—again, more is better)
• Italian or French bread that has been pre-sliced at the grocery store and lightly toasted or whatever crackers/crustini you can find in your pantry
• Next spread the tomatoes, onions, and cheese on top of the olive oil.
• Give them all a little toss with a fork so that they are all coated with the olive oil.
• Last, sprinkle on the Greek seasoning (according to taste).
• *Serve with Italian or French bread that has been pre-sliced at the grocery store and lightly toasted or whatever crackers/crustini you can find in your pantry.
